When doing the max weight Clean & Jerks for 10 reps, should we drop the weight to the ground? or control the wieght down?

It seems a potential for injury while trying to control the wieght back down from the clean to hang position.

Also should we go into the deep squat on the clean portion, I've seen it done different ways.

We like to see a touch and go at the ground when doing C&J in this manner. So, yes it should be controlled from the clean to hang position. The weight should go back down in the same path it came up so injury is not an issue.

We generally will not insist on the deep squats at these loads, though I think it is good practice.

It is important to note that the squat should come from you pulling yourself under the weight, not from catching the weight high and following through to a deep squat.
