2. Nitrate's
3. Better stuff comes in cans then Pig Brains. i.e. Sardines, Mackerel.
4. Don't know the Pig.

OK so I saw some pork brains in the freezer section of my local grocer....not canned. Looked like golf ball size pcs of pink meat through the foggy container. Thoughts?
