I'm happy to report from personal experience that fat does not make you fat. I've been eating strict paleo for 26 days as part of a 30-day challenge and my fat intake is 45%-50% of my calories every day. I've lost almost ten pounds.

As to the milk question - please use the search function. This question has been asked and answered many times.

You can only gain weight if energy-in exceeds energy-out so it is true that fat doesn't make you fat but the same can be said for carbs and protein; no positive energy balance no weight gain. It is however important to remember that different macronutrients have different effects when digested and as this extract from Clinical Sports Nutrition 3rd ed. (Ch. 5.3; p.115) suggests it's likely that your dietary fat intake ultimately determines adiposity not your CHO intake (with the exception of significant and prolonged overfeeding of course) -

"Under normal physiological condition CHO, protein and alcohol are not easily converted to bodyfat (Swinburn & Ravussin 1993; Prentice 1998). Thus, increases in the intake of non-fat nutrients stimulate their oxidation rates proportionally. Conversely an increase in dietary fat intake does not immediately stimulate fat oxidation, thus increasing the probability that excess dietary fat will be stored as adipose tissue (Abbott et al. 1988; Westerterp 1993; Prentice 1998; schuts 2004a)."

While fat doesn't make you fat, excess calories (beyond maintenance or what's necessary for muscle growth) from fat sources will make you fat. The 1st Law of Thermodynamics still applies.

i realize that but i still need a certain blend of carbs. trying to determine where to start. Remember my goal is to gain weight and take efforts to keep fat gain to a minimum.

What does this statement mean? I am confused.

As the others have said... Fat in itself doesn't make you fat... unless you have too much of it. Just like Carbohydrate. What makes you gain weight is consistent excess calories, whatever the source.

So eat carbs if you want, eat fat if you want...

If you are trying to gain weight but want to keep fat gain to a minimum, simply

a) keep your excess small (say 3-500 kcal/day for a gain of <1 pound per week)
b) lift heavy
c) get enough protein

It's not as simple as "calories in vs. calories out". If it worked simply that way, all those people that were on low-cal/low-fat diets doing chronic cardio would be the thinnest folks around...we've watched/learned from their failures.

Food profoundly affects our body's functions partially by fuel (kcal), but mostly by hormones eg. insulin. Fat is hormonally neutral...carbohydrates most certainly are not.
