Coconut oil. Works better than non-stick spray and makes the eggs a little lighter and fluffier. Some brands have a stronger coconut taste and some are essentially tasteless so try a few and see which one you like best.

Dang you! You beat me to it

Just a bit goes a long way for flavor-- and makes me not miss table salt at all.

Try Extra Light Olive Oil becuae it won't burn like Extra Virgin Olive Oil while cooking at high temperatures.

+1 to the bacon grease. I store the excess to use in these occassions. Or use butter or EVOO. Depends on the weather.

I don't actually use a non-stick pan. I use a cast iron skillet, which is naturally non-stick given you season it properly or use it to cook with lots of fat/oil.

Also, 2 eggs sound very little. Is there anything else in there? If I'm only eating eggs for breakfast, I'll stick in 5.

I just read Loren Cordains Paleo diet book and he suggests canola.

Re: Best olive oil/cooking oil for eggs

There are things better than bacon grease my friends.

And that is bacon grease with stuff.

I like to cook veggies and maybe some meat or cheese in bacon grease with some spices and keep that in the fridge. I then use that for my eggs.

Classic recipe is

grease from 1 pound of bacon
2 medium chopped onions
2 medium to large chopped tomatos
~ 1 lb choppedspinach

cooked thethe onions, then tomatos then spinach. 1 good sized spoon full to two eggs works well.

experiment with other ingredients

You can add the bacon to the eggs when you cook them, don't put it in the sauce, it gets soft. Or you can do what I do and instead of candy dishes, bacon dishes. I have a mix of cashews, bacon and dried cranberries. It's pretty good.

Re: Best olive oil/cooking oil for eggs

I have to disagree. There is only one way to cook perfect scrambled eggs and that is with copious amounts of butter.

Melt an ounce butter in pan on a low heat.
Beat 6-8 eggs gently and add cream, salt and peeper.
Add eggs to pan and keep heat low. Stir as much as necessary but no more.
Just before they are done to your liking remove from the pan and add a few ounces of cold butter. This will halt the cooking process.
