I was playing around with whatever ingredients i found in the fridge and concocted an interesting (and in my book )delicious recipe. I thought I'd share...
My proportions were based on whatever I had in the house and my zone needs...

Endive Salad

chopped endive
pineapple
sliced or slivered almonds and or chopped walnuts
cinnamon
pinch sea salt
opt: sliced chicked or turkey breast (a good way to use up any leftovers)

The salad gets moist from the pineapple; I actually used canned organic crushed pineapple. Therefore I felt the nuts covered my fats gving me a crunch and no other oil was necc. as a dressing. Let me know what you all think!
