Legume sprouts

Paleo or not?

I've started sprouting lentils (as per wfs http://www.instructables.com/id/Spro...r-own-Sprouts/ ) and want to confirm what I've read online and my intuitive reasoning - the sprouting process deactivates a lot of the harmfuls and causes good stuff to be synthesized (vitamin C, etc), also breaks down proteins into AAs so they're easier to digest, thus removing most (if not all) of the paleo concerns. In essence, they're "transformed" into fresh veggies.

Sounds like sound logic to me Skylar. Pretty much every vegetable starts out as a seed. I'm unaware of any paleo concerns in consuming "baby" vegetables versus the "adults".
