Oh....I don't use flax unless it is a fat substitute, and to add fiber. 3 cups of flax is a billion calories as well. (Ok, only 2400 calories!)

I am not sure what I'd use instead of cornmeal, what is the buckwheat replacing?

Saw hazelnut flour/meal yesterday. Looks good, perhaps worthy of crumbs on veggies, fish, chicken. Not sure about fully baking with them but maybe for chocolate ball? But I couldnt do that or I would eat them...ALL!

I do like almond meal, but then again, thats all fat.

Here is a new one, not really a recipe for a meal, but as a topping to any type of meat or fish it is excellent.

I suggest using a white sweet wine like a Muscat for fish and poultry, and a Chianti for the red wine version for steak and pork.

George's Shiitake Mushroom Sauce

Common parts:
1 package dried shiitake mushrooms
1 cup wine
1 pat of butter
1 tablespoon capers (these really bring out an awesome flavor!)

Cover with a lid and bring to a boil at medium heat then reduce heat and let slowly simmer 15-20 minutes on low heat (keep lid on).

White wine version only:
Mix in 3 tablespoons cream or half and half right before pouring over meat.

George, the buckwheat isn't replacing anything, the recipie originally called for that much buckwheat plus 3 cups of cornmeal. Do you think that instead it wold make sense to go with 5 cups of buckwheat with .5 cups of flax? (guessing that the buckwheat would have more of a firming effect than cornmeal).

I think maybe I might have an answer. Use the normal 3 cups of buckwheat flour (I'm guessing that is what it is calling for), but instead of cornmeal, use whole buckwheat groats with flaxseed meal mixed in. An acceptable compromise that fits what the cornmeal was trying to do. You can also coarsely grind buckwheat groats to get a meal like cornmeal if that is a closer intent. Groats are not that big to begin with so you have to be careful.

If anyone hasn't tried it, the Pumpkin Cheesecake recipe (WFS) at The Warrior Diet site is absolutely amazing. I'm using Marscapone instead of low fat cream cheese and whole fat ricotta. YUM!

If you cut it up into 1/8 of a cheesecake for a serving you get (using my substitutions):

Serving Size 159 g
Amount Per Serving
Calories: 193
Calories from Fat: 94
Total Fat: 10.5g
Saturated Fat: 6.2g
Cholesterol: 79mg
Sodium: 174mg
Total Carbohydrates: 14.6g
Dietary Fiber: 1.7g
Sugars: 8.1g
Protein: 10.9g

Vitamin A 174% Vitamin C 4%
Calcium 19% Iron 9%

Awesome thread, I make the pancake batter the night before and eat it for breakfast before I workout. Really delicious and easy. I wish this would stay on the front page so I don't have to dig for it...
