I miss crunchy things

I've been essentially paleo (I recently re-introduced beans since cutting them out for a month offered no noticeable benefit) for a bit over a month now and I find my worst cravings are for something crunchy. What can I eat or make that would satiate my need for crackers and chips? Can I make crackers out of almond meal and egg or something? Nuts are okay, but it isn't the same sort of crunch that I'm missing.

Note: Veggies snap, they don't crunch!

The best and tastiest approximation I have found is ultra-crispy bacon.

I learned on accident that if you slice eggplant thinly and grill on high heat with a little or no oil and then salt they end up like potato chips.

I think my error was not putting enough oil, which would have made them soft. Anyhow, without oil they just get dry and crispy like chips. Add salt and la voila. Sort of like potato chips -- like if it has been a long time since you had chips and forgot what they really taste like.

if you're really hard up for crunch they have those veggie chip things all over now. its like beets, yams, sweet potatos made like chips. kinda salty but otherwise iirc not much bad for you stuff in them.

do a google search, but I remember somewhere seeing a recipe or two for flax or almond meal crackers, its essentially almond meal/flax meal plus an egg, spread thin, baked quickly and tada

never done it, but sounds simple enough

Are you allowed to have cheese? (i'm thinking not). If you ARE then you can shred cheese, put it into a dry skillet in one layer and 'fry it' crisp. Bend it into a taco shell and add meat would be really good and crunchy.

Terra chips?

Ingredients: a seasonal mix of root vegetables (sweet potato, parsnip, batata, taro, yuca), canola oil and/or safflower oil and/or sunflower oil, beet juice concentrate (for color), salt.

I recommend very occasionally eating whatever crunchy thing you crave in modest quantities.
