Pears, pineapple, peaches, etc.

What's your opinion on the canned versions of them?

And what is the difference between the liquids they are in? (Something to do with added sugar, but I don't know how much is added, and how much that affects the diet.)

Yeah, some of them are in syrup. Rinse the fruit off by straining it or just pour out the syrup and fill the can a couple of times to help flush out the rest of the sugar water.

Good as a backup fruit but I try to minimize them. Fresh is always better.

The ones in heavy syrup are the worst, light syrup second worse. Both add too much sugar to the mix.
Look for fruit in natural juice or water if you can find it, and as mentioned before, strain before serving. Also consider frozen fruit for storage.
