actually, that is my grandmother's stuffed chicken.

and turducken is only interesting in theory. your outside bird is never done at the same time as your inside birds. it turns into a burned up mess. it's better than the stuff people eat in a lot of places i've visited, but i'd rather just eat a duck or a hen. if i were hungry enough, i guess i'd eat the turkey too.

You're Grandmother was pretty cool. Agree about the triple bird recipe, but double bird came out OK, though might chop up some different meats and veggies for the stuffing instead of using the Cornish Hen. I did chop it down, mixed into big bowl, froze some, rest will be eaten this week with different sauces.

Feel free to post any of your fav Granny recipes, and seeing that you're from New Orleans, please post up some of your fav's.

Jay,

One suggestion for when you have a large amount of stuffing for a bird or other animal is: completely debone the animal being stuffed (and the animals used for stuffing, if any). This extra step will result in more even cooking and a better finished product. Obviously you will want to cook anything prepared this way low and slow to avoid drying out the outer layer.

It's not an easy method, but you will appreciate the results. A good butcher should be able to do this for you as well, but it may cost you a fair amount. Also be sure to ask for the bones for stock (not that you need any reminding not to waste a part of an animal).
