The Beef Jerky Test

Good jerky is an art with a very long history, but the practice has been confused by companies and brands that place profit first and product last.

Fortunately, there is a quick test to spot the the fake, "chopped and formed" or "chunked and formed" products which isn't actually "Jerky" from the authentic, paleo-friendly beef jerky made from whole muscle meat.

Here's the quick test: If you don’t see “Jerky” on the ingredients list, you’re getting something fairly different. While you may see “Jerky” elsewhere on the packaging, when you don’t see it in the ingredients list, you’ve probably purchased a “chopped and formed” product.

These “chunked and formed” products are created through a process of grinding hamburger-like meat or remainders into a fine paste (thereby increasing surface area, sometimes allowing the use of less salt but also degrading protein content); then using an extruder to shape and pack. Because the USDA defines “Jerky” as a product produced from one uniform cut of meat, these products may not have the protein content you could expect from whole-muscle-cut jerky.

Check those labels!

This is why I make my own!! hehe I turned an old 1950's fridge into a smoker and it works awesome!!
