I have yet to try this, but it looks really good. If you are strict paleo, you can always take out or substitute things as desired. But this is the ingredient list.

Slow Cooker Squash Stew

3 tblsp EVOO
1 medium onion, thinly sliced
2 cloves garlic, sliced
2 tblsp tomato paste
1/4 tsp red pepper flakes
1 1/2 cups dried chickpeas, rinsed
1 lb butternut squash, peeled and cut into large pieces
1 bunch swiss chard, leaves and stems separated and roughly chopped
1 piece parmesan cheese rind, plus grated parmesan cheese for topping
Kosher salt and black pepper

Heat the olive oil in large skillet over mediium heat. Add onion and garlic and cook until soft and golden brown, 4 to 5 min. Stir in the tomato paste and red pepper flakes and cook 1 minute. Stir in the 1/2 cup of water and then transfer the contents of the skillet to a 6-quart slow cooker.

Add the chickpeas, squash, chard stems (not leaves), the parmesan rind, if using, 2 tsp salt and 7 cups of water to slow-cooker.Stir, then cover and cook on low for 8 hours

Just before serving, stir in chard leaves. cover and cook for 10 more minutes. Discard parmesan rind, if used. Top with grated parmesan.

Per serving: 428 calories

I made goat stew this weekend.

1 head cabbage
1/2 onion
1/2 head cauliflower
1 giant carrot
1.8 lbs goat, bone-in
2 tbsp olive oil
curry powder, pepper, salt, chilis
enough water to cover all the ingredients


slow cooked for 10 hours

bone-in eff tee double-you.... hella nutritious... I wish they sold big globs of bone marrow.. I'd deep fry that shizz..

This is not a slow cooker recipe, but I make frittatas for easy snacks loaded with veggies. I usually overload mine with spinach and whatever else I feel like.

I took the advice earlier in this thread and modified the recipe a little bit:

3 large tomatoes
1 onion
2 packs of brussel sprouts (about 25 total)
1 pack asparagus
Small bundle of fresh cilantro
1 large can tomato paste
1 pack fresh spinach
1 eggplant
3 zucchini
1 pack mushrooms


I fried the tomatoes and onion in olive oil while heating up the stockpot with the tomato sauce in it. I then chopped everything up and threw it in the stockpot and simmered it on med-low for about 1.5 hours. Got a really nice thick stew that I packed up into several large tupperware containers that I have been eating with at 2 meals per day, just adding lean meat. Tastes great -- the cilantro is a great addition.

My new trick is cauliflower. You can add it to almost anything and it works.

You can chop it up real small in the food processor to make rice. Then add it to soups like a chicken and rice soup, jambalaya, etc.

If you cook it before adding to the food processor it whips up like mashed potatoes. Some butter, cream, salt, and pepper and it's pretty tasty. My wife put it on top of shepards pie.

Or leave the cauliflower in bigger chunks and put it in a stew and it's just like potatoes. Cauliflower Curry soup is great.

I added some lamb neck bones for added flavor and meatitude because that's how I roll.

I always throw ham, green beans, potatoes, onions and carrots in a crockpot and let it sit overnight. I need the convenience in my life because I have a busy and unforeseeable work schedule on the farm. Even after work, I don't really feel like cooking so this makes it really easy. This is kind of a difficult thing to give you recipes 'cause you can pretty much chuck whatever you want into a crockpot and get out something delicious and easy.
