Paleo is easy for breakfast, couple eggs, a few cups of broccoli or other veggies, a few nuts and a 1/4 of berries.

I've never made a frittata w/o cheese, but I suppose you could.

Here is the first recipe I found (WFS):

You can double the recipe if you have a larger pan and make around 4 meals. The frittatas store well in the fridge and can be eaten cold, warm or at room temperature. Throw in an apple and a handful of nuts and you're good to go.
