Vegan Recipes

Hello, everyone. I recently started dating a girl that is a Vegan and she is coming to visit me next week. I would like to wow her by whipping up some amazing vegan cuisine. I, however, have probably never had a meal without either meat or cheese in my entire life.

Does anyone have some favorite vegan recipes they would like to share? She will be here for a few days so breakfast, lunch, dinner recipes are all welcomed.

I know how to cook vegetarians, but not how to cook for them.

Anyway, does she eat dairy and eggs? If so, you can pretty much make what you normally would and substitute eggs of dairy for meat. Or use tofu.

THat is the easiest and most straight forward way. If you have any Zone books, they have vegetarian recipes

well if she is vegan, that means no dairy or eggs.

Is she (or you) ok with eating soy? Tofu can be subbed for meat in most dishes.

We served this at our Christmas party, it was GONE.

I have a fantastic vegan curried pumpkin soup recipe, I'll have to look it up for you, if you say please, I'll see if I can find it for you.

PS. There's a website called www.veganbodybuilding.com (wfs) where they talk quite a bit about protein sources. I send my vegan/veggie clients there a lot to prove that protein is necessary. Might have some good protein recipes that you can both eat. Carnivores switching to veggie diets all of a sudden are prone to get a bit gassy.

Vegan so no dairy products or eggs. She does eat tofu. I would not want to make soy a mainstay of my diet, but I will eat it occasionally.

I have never cooked tofu before, is there anything I should know about cooking it?

Sara can I get these ingredients at a chain supermarket like Wal-Mart or Kroger?
1 teaspoon coriander seeds
1 teaspoon cumin seeds
3 1/2 teaspoons curry powder

Also for the pumpkin soup PLEASE!!

Yes you can. I would substitute 1/2 tsp ground coriander and 1/2 tsp ground cumin if you can, it may be easier to find and you wouldn't have to grind it, but no biggie. Pumpkin soup coming up.

For the hot Hungarian paprika would regular paprika do? I know I have regular at home.

Curried Pumpkin Soup (this makes a lot, but freezes very well)

4 Granny Smith Apples, peeled, cored, chopped
3 cans pumpkin (or 4 medium sweet potatos, peeled and chopped)
3 large carrots chopped
2-3 tbsp curry powder
5 cups vegetable stock
2 cans coconut milk
2 tsp salt

2 medium onions, chopped
2-4 tbsp olive oil

Saute onions in olive oil until caramelized (softened, slightly browned). Add stock and bring to a simmer. Add vegetables and simmer until soft. Allow to cool, puree in batches until smooth. Stir in curry powder, coconut milk, and salt. Return to simmer and adjust seasonings to taste.

Serve with thick crusty bread and a dry chardonnay.
