For anyone looking to enjoy guacamole without eating chips, try sliced cucumber instead. The cucumber pairs nicely with the guacamole and is much healthier.

Guacamole and turkey burgers (my wife's favorite).
I like a cut up avocado mixed with TJ's Tongol Tuna, some olive oil, sea salt, pepper, and cilantro. |

Darrell, I use olive oil to moisten everything rather than mayo. May not make it "tuna salad," but it makes it "tuna yummy".

Guac (and plain ol' avocado) is really yummy with steak.
A favorite meal around my house is steak over a big bed of arugula (or a spinach/arugula combo), with avocado and a drizzle of balsamic reduction. Quite the combo of flavors and textures: savory (steak), peppery (arugula), sweet and tangy (reduced balsamic), cool and creamy (avocado). Mmmm. We had it with oven-roasted cauliflower tonight in fact. (Before learning to prepare it this way I would have said I don't like cauliflower, but, omg, this way it's like french fries or something. Only a billion times healthier.) |

You can make your own mayo from lemom juice, olive oil, and egg yolks. All paleo. In general, the ratio is 1 egg yolk for 1/2 to 1 cup of oil, plus 1 tablespoon of acid per cup of sauce. Google home made mayonnaise for instructions

i moisten tuna with some mustard and olive oil. yummy. when i make my homemade mayo, i also add a bit of mustrad. to guac, i add mustard powder occas. mustard is really a decent flavor enhancer!
