Zone Help on OutlawWay

Matt Chan's videos from a few weeks back got me wanting explore eating Zone. But I'm still left with lots of questions...

I'm sitting at 183 lb of lean muscle. I tried Zone for 5 days to try to get a baseline. At 25 blocks, I was angry, miserable and my workouts suffered. I upped to 30 blocks x4 fat and felt better. So my first question....what's the best way to determine the correct number of blocks? Is trial and error the only way to find out what works for you? If 30 is the number where I feel best, should I just stay there and adjust based on my workouts?

I've always been a 'hard gainer' with a low BF%. When I started OutlawWay, I was strict Paleo but found I couldn't get through the work and my day. In order to compensate, I started on a 1000cal/day protein/carb shake (not Paleo). I've seen pretty significant weight gains and corresponding strength gains. However, I'd really like to get off the shake and replace it with 'real food' while maintaining gains. I'm unsure of a good Zone friendly ways to do this. Suggestions to make up 53g or protein and 150g of carbs?

I've been wrestling with this for a few weeks. Any help is greatly appreciated.
