Really good minestrone recipe - For all who need more veggies in their diet

I've been looking for a good minestrone recipe to help me get more veggies in my diet, since eating lots and lots of broccoli just isn't in my future. This stuff tastes just like Olive Garden's minestrone (meaning it's awesome!)

Only modifications I made was to use only one can of beans. I think I'll use some tomato sauce next time to thicken up the broth too.

I just had to share, after a long time of looking, this stuff turned out to be what I needed. Enjoy!
