Completely awesome paleo pumpkin pie!

My little sister invented this (I'm so proud ). (I know there is a debate whether or not agave nectar is paleo, but IMO it's cactus juice and was here 10,000 years ago. It is sweet and should still be eaten in moderation, though.)


Anyhoo, here's the recipe:

Filling:
3 eggs
1 can of pumpkin puree (just pumpkin, no other stuff!)
3/4 Cup dates
1/3 Cup melted coconut oil
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
agave to taste (if you want)

Crust:
1 1/2 Cups of raw pecans
2 Tbsp melted Coconut oil
2 Tbsp agave syrup

Crust

Pulse the pecans in a food processor until they are no bigger than lentils or split peas, you can use a mortal and pestle, but itís much easier with a food processor or blender. Add the coconut oil and the agave and blend it until itís evenly blended. Dump it into a pie pan and push it with your fingers to cover the bottom and sides. Even it out with a fork, there may be excess, but itís better to have to much than not enough!

Filling

In a food processor, puree the dates. Mix pumpkin and spices in a bowl and blend well, slowly mix in the date puree. If you feel that you want the mixture to be sweeter, add agave as you feel necessary. Add eggs (I did this last so I could eat the mix without worrying about raw eggs.) Pour pumpkin mix into the crusted pan and cook for 15 minutes at 425F, then turn temperature down to 350F and cook for another 45 minutes, or until pumpkin mixture is set. Let it cool or just eat it. Yum!!!

Sounds great! I love pumpkin recipes. I just made pumpkin chili this week. :stir:

I also love seeing posts from the good ole north west!

Here's another one that;s very similar(WFS), minus the cooking. Not entirely paleo also, but the best tasting pumpkin pie I've ever had
