Hey folks, I am doing a presentation on this. Does anyone know of any studies that measure physiologic responses and adaptations in kids to a crossfit like program? Aerobic/anaerobic capacity, muscle strength and endurance.

No study has ever been published on any population using a CrossFit protocol.

Children have been tested with interval training, and show great benefits. That's about as close to CrossFit as you will get. Just search in pubmed, you will find plenty of studies.

Emil,
Did you know my wife and I have been posting CF kids workouts for about 2.5 years now? http://www.CrossfitKids.com We are in the process of doing just what you are asking, and putting a PT test together for affiliates who are run Kids programs. We have some data we could discuss, but it is not published yet.
I sent you my cell number if you want to discuss in a reply to the Crazy Monkey email.
