I'm curious about how others break their carbs down.

I just got finished cooking 3 lbs of kale which works out to about 25g of Carbohydrates by one of USDA calculators I found. Not even enough for a a four block meal. Not to mention, you should have seen the size of the pot it took to cook it!

Do people end up eating more fruit than vegetables, subbing with grains, or do you just tough it out and cook and eat the monster number of veggies it takes to get all the required carbs?

I think it a kind of trade off. Generally you would mix your carbs so for a 4 block meal maybe
1 blk from kale
2 blk from sweet potatoes
1 blk from fruit

then you are eating a manageable amount of food

The one caveat it that the denser the carb source ie less fiber the higher the glycemic index and the greater the chance of raised insulin levels. So the way I do it is try to pack in as much green leafy veggies as possible then finish our requirements with fruit or sweat potatoes or some other dense carb source. Sombody please correct me if I am wrong or chine in with aditional info.
