I just saw "Greg's big fat pullups"... is this the correct way of doing kipping pull-ups?

THis definitely looks correct, since a kip in gymnastics involves bringing the hips up to the bar...

No, for regular workout purposes you are usually trying to, at most, bring your chest to the bar. Check out Annie and Cylle (sp?) doing pullups in the videos listed in the FAQ
