Meat shrinkage on zone

Can someone pls help me figure out how much chicken and/or beef shrink (even fish for that matter)? This comes up when I want to stir fry--I measure my veggies but dont know how much to allow for chicken or meat shrinkage!

Thanks all!

Re: Meat shrinkage on zone

Approximately 10% of the liquid gets cooked out. You can check it yourself for various meats and cooking methods by weighing the meat before and after. I did this with chicken and it was about 10%.

Hope this helps!

I am glad I wasn't the only one that had the same thought when I saw the title of the post.
