Something interesting in the book, Neanderthin, caught my eye and I wanted some opinions about it. On page 157, in Neanderthin, Ray Audette lists a typical daily intake of food. Part of his breakfast is 6 strips of uncured bacon. There is an asterik next to the bacon - in the footnote, at the bottom of the page, Audette says "I soak my bacon overnight in a cold pan in the refrigerator. Soaking removes the sugar and salt content of the bacon, as sugar and salt are water soluble." Any thoughts or opinions regarding the efficacy and or validity of Audette's method?
