Some supplements will say take on empty stomach, what qualifies my stomach as empty? Is there a set time? Also how to others schedule there supplements around there schedule? I.E ZMA, wobenzym-n?

A good est. would probably be 2 1/2-3 1/2hrs.

My digestive enzymes say 30 minutes before or 60 minutes after eating, but I think that is a little quick on the tail end.

I think it is weird that they say "empty stomach" is there such a thing? In a 24 hour period is our stomach every "empty"? Does this mean absent of food? I believe this would mean i would have to fast for a certain amount of time in order to take supplements.

I take ZMA and find it works just fine if I leave about 1 - 1 1/2 hours. If you eat dairy it would be better to leave it a bit longer I think.

I think it just means don't take it at the same time (or closely following) a meal. Let's try not to read too much into things.

Roughly...empty stomach is the time it takes to complete digestion which is around:
2 hours for carbs
3 hours for protein
so 3+ hours is what they mean by "empty stomach"....or just take it right when you wake up after 8 hours of fasting.

ZMA I believe is supposed to be taken right before bed....as it enhances your sleep too.
