Mix dry then mix in wet. Fill up some cupcake paper liners. makes like 6-10 depending on how full you make them.

Re: Paleo Pumpkin Muffin Recipe

I am going to test this recipe with natural un-flavoured whey protein in lieu of the almond meal. I don't have any honey left so looks like Stevia Extract is the best alternative I suppose. Here's to the hope of a non-epic fail experiment.

That is not going to work at all, whey is nothing like almond meal, you need to use a flour substitute. If you use whey instead you are going to end up with a complete mess.

Next Time I need less Allspice that is for sure...I am thinking probably 1 Tablespoon instead of 2. All in all, they turned out pretty good. They have the typical dry whey protein aftertaste..however the Flavor is definitely enjoyable.Next time I might add some applesauce to balance a bit of the dry aftertaste.

When I have all of the ingredients, I will try and make 1 batch with the recipe from the Video and 1 batch of my tweaked recipe. Then I will rate the difference.
I can't complain with my Macgyver'd recipe of the muffin...especially with the nutritional facts of each Muffin. Makes it a nice change from just having a shake.

Wow, Matthew. I am SERIOUSLY impressed with the MacGyver'd muffin thing you did. I think I'm going to try 1/2 and 1/2. Inspiring!

I popped out to grab all of the Ingredients from the Video and made another batch to test. The obvious answer is...yes the ingredients in the video make it tastier, however... The protein difference was substantial between the two (as would be expected. My 2nd batch was 10 muffins which came to a total of:
144 calories, 7 grams of fat,18 grams of carbs and 5 grams of protein.

I definitely like your idea of 1/2 almond flour 1/2 protein...I may try that too. However in the video he said apples when referring to Fall...and it made me salivate thinking of how much I miss Apple Crisp... Tonite I will try to make Apple Cinnamon Muffins.
