Question Any good recipes for left over Turkey?

I am looking for some good ideas for my left over turkey. I am sure you guys can come up with something. Thanks!

I've found about 4-6 oz shredded turkey (or chicken), a cut up or mashed avacado, and about 1/2- 3/4 cup of salsa makes a great mid day meal for me. Don't know the blocks for it, but I'm paleo, and it has protein, carbs and fat.

I've been making mine into breakfast scrambles with eggs and green onions and a bit of garlic and black pepper.

Carcass + carrots/onions/celery + crockpot + 10 hours = best turkey stock ever.

Leftover meat is great for tacos, enchiladas and other mexican fare.

I made a turkey chili with mine..I just threw a bunch of ingredients in my crockpot overnight on low.

Here is what I used:
chopped up turkey (i used about 2 lbs worth)
2 large cans of diced tomatoes
a few T of pico de gallo
crimini mushrooms
1 large onion
oregano
paprika
cumin
3 T chili powder

It is very good...I just ate some for lunch and it helped use some of our leftover turkey!

I call it the Thanksgiving Sanwich:

Turkey pulled into small peices
Cornbread dressing (awesome if you are not from the South and do not know what it is)
Cranberry Sauce

Take the turkey and cornbread dressing and mix together into a patty (more turkey than dressing) Just like you would a crab cake.

Lightly pan fry patty in oil.

Top with crandberry.... SO GOOD!
