Replacing calories from grains

Over the past 2 months or so, I have been gradually cleaning up my diet and have almost reached my goal/ideal diet of eating nearly strict paleo. The only non-paleo meals I'd like to keep are my PWO shake and my weekly cheat meals aka Sunday waffle breakfasts. The only thing I feel like I have left to do is take out my grains, which are mostly pasta. The problem is, I don't know what to replace these calories with.

Here is a typical day of eating for me. I've bolded what I want to take out, but I'd really like to keep my calorie intake for the day relatively the same or even increase it. According to fitday, I'm getting about 5000 calories on workout days, around 4000 on rest days when I don't have my PWO shake. (*I am 20 years old, 6'3" 220lbs., don't know what my BF% is but it is relatively low)

7am - breakfast
4-5 scrambled eggs with spinach
4-5 sausages OR 6-8 strips of bacon
fruit smoothie (1 cup frozen berries, 1 cup water, 2 bananas)
English muffin with jam
20g fish oil

10am - morning snack
couple handfuls of trail mix (peanuts, cashews, walnuts, almonds, raisins, dry cranberries)
couple handfuls of blueberries OR grapes

12pm - lunch
large salad with 1 chicken breast OR 1 can of tuna
~1 cup pasta with tomato sauce

3pm - afternoon snack
same as morning snack, except grapes/blueberries are replaced with baby carrots and celery

6pm - dinner
2 chicken breasts OR 1 lg steak/porkchop
lg serving of mixed veggies OR salad
~1 cup pasta with tomato sauce

**8-9 workout

9pm - PWO shake
1 cup whole milk, 1 cup water, whey protein, 1 banana, 4-5 strawberries

10pm - late night snack
1/2 avacado
1-2 handfuls of nuts
4-5 strawberries
10g fish oil

I also cook nearly everything with olive oil, but have no idea how much I use in a day.

So what can I do to replace these calories from grains? And any other tips/advice on my diet?

You're 20, you may not even need to cut out those grains, just saying...

Otherwise, the natural choice would be veggies, or sweet potatoes (depending on your version of if they are paleo).

But i think JS's suggestion of fat is the easiest. A couple mouthfuls of olive oil should do the trick, or avocados, etc.
