Starting For newcomers to the CrossFit methodology

On days I'm not doing CrossFit?

What kind of workout/exercise is recommended for a beginner on the days I'm not doing CrossFit?

Before I joined, I was working out 1hr/day (weights and Cardio). Anyone have any suggestions?

You should rest on your rest day, ideally.

On your rest day you need to rest. You body will be taking a beating when you are new to crossfit. However, like the answers before stretching, playing a sport, or doing something light can help your recovery. I would just add that it would be beneficial to ice your sore muscles.
