because i was blown away by how good fried eggplant was, i decided to try spagehtti squash, and loved it as well. now i'm on a quasi cooking kick, and was wondering if anyone knew some paleo/zone friendly recipes for sauces that one could put over the squash?

I use spaghetti squash in place of pasta. I make a sauce with onions, garlic, zucchini, eggplant, fresh basil, etc. Top the squash with the sauce, throw in a chicken breast and you're good to go!

I haven't tried this, but off the top of my head it sounds pretty tastey...
Take some Smart Balance (which I use in place of butter when I want a nice rich sauce when cooking). Saute some onions and garlic. Toss in some nuts (slivered almonds, walnuts, or pine nuts), add some seafood (shrimp, mussels, clams). Maybe add a bit of white wine if it isn't saucey enough for you. Season with a bit of black pepper and mix with squash. Shouldn't take more than a bout 10 minutes to do the sauce. If you wanted to give it a more Mediteranean slant, you could add the wine, some kalamata olives, fresh basil leaves and diced fresh tomatos (don't cook the tomatos, just heat them up a bit right at the end). |
