Nutritional Value of Cured Pork Meat

On a 80/20 paleo diet.
I'm a student constantly on the go, so I mostly eat paleo, but not 100 percent of the time.
Would like to know the nutritional value of cured sausage containing:
pork, pork giblets, natural casing, cayenne, chili, salt, and pepper.

The sausage
Contains NO: nitrates, gluten, conservation agents, dairy or nuts
Assume Formlessness

Sounds like a good source of protein. May want to watch the sodium, but that varies from person to person.

the omega 6/omega 3 ratio of conventionally raised pork is terrible...but if you don't care about that, it's fine.
