quinoa's still grain like. try cauliflower. you can't tastethe difference

I just made some with spinach, ground beef, tomato sauce, brown rice and cottage cheese...turned out very good!

If you can't afford organic grassfed ground meat, try subbing plain ground beef for ground beef heart.
It's loaded with lots of good stuff you won't normally get. And, it has a slightly liverish flavor that imparts an interesting flavor profile when paired with strong cheeses or veggies.
