Re: so, what did you have for dinner tonight?

I shredded up a grilled skinless chicken breast, mixed it in a bowl with some brown rice, then added fresh grated cheese and salsa. 600-ish calories, 65-70g protein, 100% yummy.

I am jealous of the meals being posted here. I had a large pouch of Tuna, a huge handful of Almonds, and 2 apples. I need some beef soon!

Re: so, what did you have for dinner tonight?

that shrimp salad sounds yummy. my husband is allergic to shrimp so I try not to have it in the house.

I won't get home till after 8 tonight so I'm eating dinner between meetings today. about 4 cups of mixed greens and baby spinach. 1/4 of an avocado, chicken breast and a few scoops of the tomato cucumber salad from last night. Have some walnuts and berries to occupy me during my research meeting.

I tried this last week, delicious!

As for me, yesterday I had pesto grilled chicken, with asparagus and a watermelon/tomato salad. (sounds weird, got it from this article: http://www.nytimes.com/2009/07/22/dining/22mlist.html WFS -- some interesting salad ideas there)

Today, I'm thinking I'm going to make my favorite: saute some steak, onions, bell peppers, chili peppers and cumin in olive oil and lay it over a bed of romaine lettuce, tomatoes and avacadoes. Yummy!

Planning a pork roast for this weekend. Rub with garlic, oregano, cracked pepper, and a little orange juice. Cook slowly with more orange juice until it falls apart. Serve with grilled poblano peppers and onions.

Re: so, what did you have for dinner tonight?

New restaurant in Philly for my fiance's birthday. Barbuzzo.

"Pig Popcorn" aka gourmet pork rinds.
Caciocavallo stuffed meatballs with ground shortrib, pork, oregano and calabrian chile.
Roasted marrow bones.
Roasted brussels sprouts with pancetta, caciocavallo and lemon.
"French Farmer" cocktail with champagne, elderberry liqueur, and a raspberry for garnish.
Salted Caramel Budino for dessert (dark chocolate crust, vanilla bean caramel and sea salt).

Top 10 meals of my life, most likely.

Grilled Greek Chicken with roasted veggies (Paleo-friendly)
- 3 chicken breasts marinated in the fridge with 1/4 cup olive oil, lemon juice, pepper, oregano (I did 8 hours)
- Veggies (1 large sliced zucchini, 2 sliced tomatoes, artichoke hearts) tossed in olive oil, oregano, and pepper

Baked & broiled

Re: so, what did you have for dinner tonight?

On the menu for tonight: Seafood Boil!!!
In a very large pot/kettle, cut up a couple of onions and add 2 packets of zattaran's crab/shrimp boil
Bring water to a boil, and add 6-7 small red potatoes.
When potatoes begin to soften add 6-7 ears of corn
When potatoes and corn are done (4-5 beers later), throw in a couple of pounds of shrimp, and crab legs.
Turn off heat and simmer for about 1 more beer.
Drain off water, and dump contents onto a newspaper-covered picnic table.
Enjoy
