The bacon thread

Just what it says. Since we seems to have the same reverence for bacon as we do squats, deadlifts and Fran times, I figured it deserved it's own thread.

Types of bacon, brands, recipes, stories about bacon, poems, whatever.

I will start off with a recipe.

1lb of bacon
2 chopped onions medium to large
2-3 chopped tomatos
1 large bag spinach, chopped
big handful shredder swiss or gruyere

cook the lb of bacon, save all the grease
cook the onions in the grease for about 2-3 minutes
then cook the tomatoes for 2 minutes
then add the spinach until wilted
then throw in the cheese and remove from heat
mix until melted

this mixture can then be put into the fridge and stored.

TO serve, cook 3-4 eggs with 2 big spoon fulls of mixture. Eat bacon with the eggs.

mushrooms are an excellent addition. I'm working on a way to add asparagus.

Great thread. I've got to try that recipe sometime.

Another tasty treat:
Take scallops, wrap each one individually with a slice of bacon and stick a toothpick through it to hold it in place. Broil it for 20 minutes or so.

I also cook plantains in bacon grease and serve with bacon and 3 scrambled eggs. I wouldn't recommend too many plantains for breakfast because of their high sugar content but it's a great meal.

You can do a bunch of these in about 4 minutes on a Foreman grill. Shrimp too. Great to serve skewers of them at parties, and you can keep them coming since they only take a few minutes. Even better if you make a quick marinade of tabasco and worchestershire sauce. Stick your skewers in the marinade for a few minutes before grilling.

Do any of you that eat Paleo eat bacon?

I have been avoiding it since I started the Paleo Diet about a year ago, I could of swore I read that in the "Paleo Diet", I could be wrong though.

Any diet that doesn't allow bacon is less than optimal. I don't like the added sugar, but you can find some bacon that adds very little.

Why would bacon not be paleo?

Wait, you have not been eating bacon for a year? This is wrong, so very wrong. Might I suggest zingermans com

If only this bacon peanut brittle (WFS) didn't contain peanuts, it would be perfect. I mean, it's got SYRUP. Freakin' brilliant.

I'm tempted to make my own, using pecans instead.

Since I started my 30 day paleo thingamajig, a primary staple for me has been two thick-cut rashers of bacon covered with four scrambled eggs. (and fruit on the side, but we'll ignore that in favour -or even flavour - of the bacon) Mmmmmmmmmmmmmmmmmmmm. It deserves that overly long 'mmmm' it's that good. And so simple!
