I'm in Rome. No idea about the regions, but I have eaten cream sauces here with pasta. What is served with the cream sauces in the dishes you are referring to? I was referring more to the vegetables and meat, no one uses butter like back in the U.S.

Let's see...
* Chicken (or veal) w/marsala and cream, saute the chicken in butter first.
* Chicken (or veal) with lemon and parsley. Not a cream sauce, but again you cook the chicken in butter first.
* Alfredo sauce, which is butter, cream, and cheese.
* Pasta sauce with peppers and cream: onion and bell peppers cooked in butter and oil, add cream at the end, toss with cheese
* Gratineed vegetables, steamed or sauteed then topped with butter and cheese

My reference for Italian cooking is Marcella Hazan. Her cookbooks are worth checking out if you want to bring the taste of Italy home with you.

I've had veal in the lemon and parsley, but the veal tasted bland to me, the butter was not coming through. That's another reason why I love eggs, you can tell when they are cooked in butter vs. EVOO. I'll check out that cookbook, I definitely want to try making some Osso Bucco. I never had it before until coming here and it tasted so good, especially with the tomato-based sauce that accompanied it. It is definitely the best meat I've had over here.

A coworker just told me she is using hCG (pregnancy horomone) injections and eating only 500 calories a day.

My knee jerk reaction was to launch into how her brain can't even survive off that, starvation mode, lowered metabolism, etc. She totally shut down and blew me off because I'm the "crazy workout girl who eats weird".

What can I do? Is it even my responsibility to keep on her about it? I'm seriously concerend for her. I don't even know WHERE she is getting the injections from, but I'm guessing the internet.

That's the "diet plan" that JWoww from Jersey Shore "follows." Just tell her it will turn her into a guido skank if she keeps it up.
