What oil?

Hi,

What oil should I be using for frying?

I was using Rapeseed oil (Im UK based) as I though this was the UK version of Canola oil but after more reading I see its not that simple!

For high heat I like to use lard.

Medium to low I use Olive Oil/Coconut Oil.

General consensus around here is coconut oil and olive oil (especially the extra virgin options) are the best.

Coconut oil is tough for cooking though because it has a low smoke point.

If you look on this site, (wfs) which has a list of paleo foods, you'll see that other oils are acceptable including rapeseed/canola.

coconut oil, lard/tallow, bacon fat, butter. I use olive oil primarily as a dressing
