Anyone cook Elk?

I've been reading the Paleo for Athletes book and just finished the part about the difference in nutrient between free roam animals and cadged animals. I was explaining this to my mother and she said that we were just given Elk meat from a friend who hunts them in Colorado or Santa Fe. I want to eat this asap, anyone have any favorite Elk recipes that's paleo friendly?

give it a very simple marinade and just grill it. depending on the cut of course.
have you ever tasted wild game? i LOVE the natural flavor it has. try not to overload it with spices and such because it is amazing. and if im not mistaken elk, especially male elk, have some natural marbling in the meat. venison chile (no beans!!!) is amazing, i assume elk would be as well. make yourself some jerky in the oven. just google venison recipes and use the most basic of them. unless you find some cool ones.

I just cooked it straight up - had a couple of steaks, some sausage & ground beef. Everything was stellar!

This is how I do steaks: sear them up on a hot grill. Little salt and pepper

I have a few really large steaks. I'm going to grill one then try to turn some into Jerky. I'm sorta stoked on the jerky, seems like a great portable meal.

I love the game meats as well. If its a Colorado elk it can be VERY sage-y.

I like the steaks with salt and pepper, grilled just a tad warmer than rare.
