Paleo Pumpkin Pancakes with Warm Blueberry Sauce (Makes 1 Serving)

Pancake Ingredients:
1 whole egg
4 egg whites
1 tbsp almond butter
1/2 cup pumpkin
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp vanilla

Sauce Ingredients:
1 cup fresh blueberries

Directions:
1. Combine all ingredients, except blueberries, in a large bowl. Beat with a fork or mix with a whisk.
2. Heat skillet to medium-high heat.
3. Start adding mixture to skillet as you would normal pancakes. (It makes about 9 small/thin pancakes, but if you want them thicker, make about 3 large ones).
4. Once bubbles form on top and there is no more liquid, flip over. (Takes about 2 minutes max!)
5. For sauce: put blueberries in microwaveable bowl for 40 seconds. (If you aren't a blueberry fan, just add some fruit on the side).
6. Spoon blueberries on top of pancakes and top with a little cinnamon. Eat and enjoy!
This looks good, but I don't know if I could handle throwing away 4 yolks

Frozen Banana "Chips"

I hesitate to even call this one a recipe, but it's awesome for the summer. Peel a bunch of over-ripe bananas and put them in a 1 gallon freezer bag. Mash them flat & freeze overnight. Break off pieces as a quick snack or dessert. Ridiculously good.
