Rendered Duck Fat

Whats the Crossfit Opinion on this stuff?
I have made confit of duck, onion, and potatoe in the stuff. Its rich and sumptious. And...from what I've read, Paleo?

What could be wrong with it?

Like all animal fats, you'd rather it came from a wild or free-ranging duck, rather than a feed lot animal, but that's about it.

Duck (and goose, almost better) fats are not only darn tasty (I'm not a potato fan, but roast potatoes with duck fat are fantastic) but some of the healthiest animal fats you can find. Tuck in!

Just bought 5 grain fed ducks from the farmers market for 100$. Pretty pricy, but hey, they threw in a quart of pre-rendered fat.
I trimmed some fat from the skin and breasts, broke it down, made duck stock with veggies, redered some fat, kept some for charcuterie, and froze the duck minus two legs for confit thats in the oven right now.

I definately suggest duck fat from the farmers market for you paleo people - im going to try confit chicken quarters with veggies. You can fry in this stuff, sauces with berries, etc.
