I want to follow the zone/paleo way of eating .will one small bite of chocolate(dove dark) and 1/2 cup of milk in my tea a day really make a difference?
I do have some minor sinus issues, not sure if it is from the grains or milk

yes and most likely.

cut both out entirely for 2 weeks (really do it) and see what happens. i guarantee a noticeable improvement.

What kind of chocolate are you guys talking about? Raw cacao nibs are wonderful foods. The right kind of cocoa powder, too.

I agree on the dairy, though.

I see some people talking about whey protein powder.
should I give this up also if I am going to give up dairy

Whey has quite a bit of positive research behind it, but it also has some downfalls (particularly if used as your only protein source in a meal that isn't immediately post-workout). I'd supplement with NAC and lactoferrin and skip the whey.

I use whey 5 or 6 times a week.usualy in a shake post work out or a morning smothie.
what are nac lactoferrin?

Still a little confused on the points of cutting out the milk and grains, can anyone clarify. Where are you getting calcium from them. a supplement?

NAC is N-Acetyl-Cysteine...amino acid, great for increasing endogenous glutathione production.

Lactoferrin is a protein....great for chelating iron and has some anti-cancer action. Mind & Muscle magazine (online) had a decent little article on it this month.

You can google either one of these and find out tons of information.
