Roasted Chicken in the Crockpot
What you need:
1 Whole Chicken, size depending on your crockpot and how many you need to serve
5 to 7 Whole Carrots, peeled and cut into large pieces
1 Bag of Frozen Broccoli (or whatever veggies you prefer)
1 Head of Garlic
Salt and Pepper
Rinse the chicken and take out the giblets, pat dry with a paper towel. Slice the lemon in half, put into chicken cavity. Slice the head of garlic in half, put into chicken cavity. Put chicken into crockpot, cover with veggies. Salt and Pepper everything. Cover and cook on low about 5 hours.
This was great! We used boneless skinless chicken breasts. Next time I think we'll salt and pepper the chicken and toss the broccoli and carrots in olive oil and sea salt. Thanks so much for sharing these!
