Storing Cut Avocado?

Here is one I have been having trouble with for a while. I did a search but I couldn't find any answers.

Anyway, I love avocado, but it seems that I am wasting so much. I will open one up, chop what I need and try to store the rest for later with no success.

What are the best ways to store cut avocado? How long can I expect to get out of it.

If your storing half an avocado, try wrapping it in cling wrap. My personal recommendation is to just turn it into guac, the lemon or lime juice will act as a natural preservative.

I eat half with my mid-morning snack, and the other half at lunch. I leave the pit in the un-eaten half, and wrap it in plastic wrap until lunch.

I usually eat my avocado 1/2 at a time, and I store the uneaten half by the following method: sprinkle with ascorbic acid (you can find it near the canning supplies in a grocery store), place in a zip-lock bag or plastic wrap, and refridgerate. Lemon juice would do the same, but I find the shaker of ascorbic acid to be way more convenient, and it doesn't seem to affect the taste at all.

And when you wrap in plastic wrap be sure there is no airspace between the wrap and the avocado. Same thing with the guac. - be sure the plastic is resting directly on the surface. The air is what turns the avocado yucky.

I usually squeeze a little lime juice on the avocado half, leave the pit in, and VERY tightly wrap it in plastic wrap before putting it in the fridge. Using this method, I've been able to store an avocado half up to 2 days in the fridge before it starts getting brown. The key is to put the lime juice on it and get it wrapped up air tight ASAP. The longer it's exposed to air the more likely it will oxidize and turn brown.

Avocado is tropical so should be stored at no less than 10 degrees Celsius.
