Instead of peanut butter try out some cashew nut butter or almond butter. I use to get the cashew nut butter at Whole Wallet but found that its cheaper and just as good at Trader Joes...yum!

Some of my staples in the carb department, that are somewhat portable -
-Apples
-Oranges
-Pears
-Baby Carrots
-Natural apple sauce (UNSWEETENED)
-Yogurt (check the nutrition info, they vary greatly from brand to brand)
-Whole Wheat bread (I know it's not super zone/insulin friendly, but it works in a pinch)
-Grapes
-Cantaloupes

My carb sources:

apples
bananas
oranges
blueberries
onions
peppers
green beans
oatmeal
brown rice
potatoes (white, red, sweet)
various other veggies

....among others

Matt, I live in a county in California where there are about 5 farmer's markets per square mile. No but really, in any event, there is always nastiness in everything, yes even organic. But my contention is the farmers around where I live I have met with all I buy from and I trust them that there isn't crap in their organic food. For the last month I've dropped lettuce in favor of spinach for better fiber/vitamin content.
