Coconut Ice cream

Anybody making their own coconut ice cream yet? Ice cream maker , stevia, coconut milk/cream ( no guar gum) what else.

I put a couple of eggs in mine. Or maybe it was just the yokes. It's been a while since I last made it, and I don't have the recipe handy.

And cocoa powder!!

Ice cream maker, coconut milk, fresh fruit of choice, a bit of honey..puree..then put it in the ice cream maker! I've also done a chocolate using cocoa powder and a vanilla using fresh vanilla bean..so far they have all been awesome!

by far the easiest recipe for coconut ice cream is:
1 can coconut milk (of a brand that smells good raw and contains nothing but coconut, such as Royal)
1 cup frozen fruit (mango for the win!)
Optional, but really helps the creaminess: 3 scoops 100% pure whey protein (NOT the stuff with sweeteners!)
Put in all in the blender and... Voila!
truly delicious, but must eat it right away or it gets runny.

Yes, but NO stevia. No sweeteners at all, just fruit.

Hey Rob,
Luv the decadent and Coconut bliss but the agave really spikes my insulin so trying to make it more paleo. I agree it tastes great and no work.
