What's the fattiest portion of grass fed ground beef you've seen?

On the recommendations from my previous thread, I went to Whole Foods where I usually get my grass fed meat looking for anything about 9% fat and the guy behind the counter told me that fatty grass fed ground beef was a contradiction.

I did some research and found another small market that has 85/15. Has anyone seen anything higher than 15% fat and if so, where can I get it?

Grass fed will never be as fatty as the same cut of grain fed. That's the point. If you want a fattier portion of ground beef than the store supplies, get a brisket or other fatty cut and get the butcher to grind it for you.

Probably not. A heavy-duty mixer like a Kitchen Aid with a grinder attachement could do it. A food processor could do it. But why bother, since having it done by the butcher is a matter of a few minutes?

(As a side note, most people don't realize that almost all grocery store butchers are more than happy to do this sort of thing. I've had whole chickens chopped up, double rib chops split in half, soup bones split... all kinds of stuff. Just ask. That goes double for the more foodie-oriented stores that are likely to even carry grass fed beef.)

My whole foods sells 85/15 grass fed ground beef.

I've also ordered from here and its a nice product. Actually a decent price too since it's minimal shipping and handling fees.

Yeah, they just have to add some of the trimmed fat from named cuts to the grinder. Breaking down a t bone into NY Strip and filet will render a bit of extra fat as scrap. If they're selling cuts, then they have fat. You can just ask for higher fat grass fed ground chuck or whatever and they can make it to order within a day.
Talk to a meatcutter, and not just the guy at the counter, if the counter guy doesn't get what you mean.

You can buy a meat grinder (hand crank or powered) on the cheap to do small volumes of meat at home, btw.
Here's one at Cabelas. (wfs)
A couple of passes through a grinder will usually get any cut to a nicely ground state.
I like to add pork fat to grass fed beef, or grind it with beef heart which usually has a higher percentage of fat. Pretty much any offal (heart, kidneys, etc) will have fat and other nutrients that skeletal muscle doesn't.

I've seen 70/30 grassfed ground beef out in Brooklyn in Meat Hook.
