Hey, thanks to Coach, Lauren and Benjamin Sims for the pork chop with corn relish recipe -- made a variation on it last night (didn't have time for the brining; grilled the pork with rubbed sage and a little olive oil, instead) and it was killer. My wife loved it, too.

To get some veggies in the meal, I strayed from the Zone, but made a very delicious and nutritious recipe from with swiss chard, beets, and goat cheese:

You could probably reduce the beets and goat cheese and eliminate the raisins and still have a really delicious meal that's not too heavy on carbs (that is, as a proportion of the calories, carbs would still be quite high, but there wouldn't be very many calories to the dish). In any case, I highly recommend it as an accompaniment to the great pork chops. Next time, I'll try those brined, first.
