I tend to think this is overblown, and indeed is exactly the point GL was formulated to address. Carrots have a relatively high GI but still few carbs overall, so their GL is low and if you're stressing about your carrots I'm worried.

Another thing to keep in mind is that fiber and fat lower the GI/GL of a meal, thats why ice cream isn't so bad for you and has a low GI even though its full of sugar (also full of fat).
In the converse of the above, ice cream is full of carbs but has a low GI due to all the fat slowing absorption, so its GL is rather lower than something like a brownie but still, of course, plenty higher than the carrot.
