What a great thread - we had something similar in the CF London site a while back. For any curry munchers (like me) out there I found this to be a good with chick pea flour (gluten free) chipaties (basically just flour a litte salt and water, then made into patties and grilled).
Chicken, mushroom and cashew curry
1 onion - roughly chopped
2 cloves of garlic - crushed
little salt and pepper
garam masala - approx 1 tbl spn
turmeric - half tbl spn
cumin - 1 tbl spn
ground coriander - 1 tbl spn
couple of handfuls of cashew nuts
plain yogurt - 2 tbl spn's
whizz all the above in blender for one minute until it is a good curry paste consistency
heat in a wide flat heavy based pan for a few minutes with some oild of your choice (i use a table spoon or two of olive oil) then add
2 chicken breasts - cubed
half a dozen mushrooms - roughly chopped
cook for ten mins until chicken is cooked (if you like your mushrooms a bit more flavoursome you could dry fry them before you put the curry paste in until they shed much of their water). You may also need a little water to loosen the sauce.
you can also add a couple of handfuls of sultanas or raisins at the end for a bit more of a sweeter edge.
I like it, anyway.
