1 banana mashed (i like mine left a little chunky, but they work well fully mashed too).
1 whole egg
1 egg white whisked stiff
1tsp baking powder
vanilla/cinnamon/fruit chunks to taste
Mix it all together and cook as normal. Flip as soon as you see brown around the edge, they burn easy so I usually make small ones in a small pan with a lid on top so they are more solid for the first flip.
They are great topped with almond butter or honey (or both).
The recipe I have been using for Paleo Pancakes is a bit different than Rebecca's, so I will offer it as well.
- 1 cup Almond Meal
- 2 eggs
- 1 banana
- 1/2 TBSP Honey
- cinnamon to taste
- salt to taste (not orthodox, but)
I mix all of those ingredients and cook on low heat in Hazelnut oil.
Always a nice breakfast
