Hot off the presses - I watch the TV show "House" and as the new season started tonight. I as House will do, will be sitting there and a stuff just comes to my mind. I had an old muffin recipe and well, I needed it to fit. It does now. Just made me some, and gobbled one down. Good with butter or honey or just alone.

Buckwheat Blueberry Muffins

Simple, easy, good. You can either take whole buckwheat groats and make the flour yourself, or buy organic buckwheat flour and use the same amount of flour as you would of whole groats.

Ingredients:
1 cup buckwheat flour
1/2 cup flaxseed meal
2 cups blueberries, fresh or defrosted
2 1/2 tbsp olive oil
1 tbsp cinnamon
1/2 tbsp baking powder
1/2 cup water
1/2 tsp salt
2 eggs, beaten

Directions:
Preheat oven to 375. Mix dry ingredients in a large bowl. In a separate box whisk wet ingredients together. Whisk wet ingredients into dry ingredients until well mixed. Mix in blueberries last, and let mixture sit for 3 minutes (VERY IMPORTANT).

Fill muffin pan (I use silicon for no stick) 3/4 full, bake for 20 min or until tops golden brown.

Makes 12 muffins.
