I have to agree with Miguel here. If you are just starting Paleo I wouldn't worry about quantities right now. I would eat about a portion of meat the size of your hand and fill the rest of your plate with green veggies along with a handful of nuts or olive oil for the veggies. You're already making a huge change to your diet that will take some getting used to. Just try the clean eating idea for a while and see how that works for you, then later if your ready for the next step you can concern yourself with portions (Zone).
I would steer away from the dried fruit because of the sugar and I would think that raw fruits would be more filling due to their water weight, but if it satisfies a sweet tooth that would otherwise lead to oreos and cake then do it.
Big thing when starting is to not get too caught up in EVERY little detail. Do they matter? Yes, or they wouldn't be details, but you don't want to let that stop you from making a solid initial try. Good luck, you're going to love it.
